Cutting up apples

Although we knew shouldn’t, we once again turned to Baby Cakes for our first recipe, which was apple-cinnamon muffins. We figured that all the other times that it hadn’t turned out well, we must have changed something, so we tried to follow the recipe as closely as we could.

As usual, for Baby Cakes, the recipe was very labor intensive. Cartoonist kept saying that she must have a bunch of sous chefs, because she always has so many steps to everything. It called for roasted apples, so Cartoonist had to cut up 2 pounds of apples, add 1/2 cup of honey and 1/4 cup of lemon juice (juice from one lemon).

Once the apples were roasted, we made up the muffin mix. We used 2 cups of gluten free baking flour, 2 teaspoons of baking powder, 2 teaspoons of baking soda, 1 teaspoon of xanthan gum, 2 tablespoons cinnamon, 1/4 teaspoon ground nutmeg, 1/2 cup coconut oil, 2/3 cup of honey, and 2/3 cup of half and half, and 2 tablespoons of pure vanilla extract.

We should have known something was wrong when Cartoonist tasted it, as she put it into the cups. See her cartoon below. I told her that it was probably going to be fine, but we have now decided that if it doesn’t taste good before it goes in the oven, it won’t taste good once it is cooked.

We threw out all the muffins. I put them in the compost. The raccoons at one or two, but left the rest. I guess they didn’t like them either.
